Red Lentil Curry

Ingredients (what you need)
300 g red lentils
2 tablespoons sesame oil
1 onion
2 cloves of garlic
a piece of fresh ginger (about 5 cm)
2 teaspoons red curry paste
1 teaspoon curry powder
1 teaspoon cumin, crushed in a mortar
400 g tomato puree (passata)
300 ml coconut milk
salt
1 handful of fresh coriander
Recipe steps
Rinse the lentils and cook them according to the package instructions.
In a pan, heat oil and add chopped onion, garlic, and ginger. Once the onion softens, add curry paste, curry powder, and cumin. Sauté for about one minute.
Finally, add tomato puree, coconut milk, and salt to the pan.
In the end, stir in the cooked lentils and you can turn off the heat.
On the plates with portions, add fresh coriander leaves. Serve with cooked rice.
