Bean soup

Bean soup starts cooking already yesterday. If you didn't soak the beans the day before, do not even attempt something like bean soup recipe. Bean soup surprisingly relies on beans as its base, so if they are not top-notch, the soup won't be good either, no matter how much you season it. Bean soup represents a hearty and comforting dish that you will appreciate especially on cold days. Bean soup also contains a lot of vitamins, mainly from the B group, and a ton of fiber. You can enhance the soup with some spicy sausage, or add potatoes for extra heartiness. Add them right after pouring in the broth. Only then will they have enough time to cook until soft.

Ingredients (what you need)
300 g white beans
1 tablespoon pork lard
1 piece onion
1 clove garlic
1 tablespoon tomato paste
1 tablespoon sweet (or hot) paprika
2 tablespoons all-purpose flour
1.2 l chicken (or hen) broth
2 pieces bay leaves
salt, pepper
parsley
bread for serving
Recipe steps
Soak the washed beans overnight in water. The next day, add a little salt and cook them until soft. Check periodically, as older beans may take longer to cook. Then drain and set aside.
Now let's move on to the flavor base. First, sauté the finely chopped onion, then add the finely chopped garlic, sauté for a moment, and add the tomato paste, sauté for a moment longer. Sprinkle with flour and create a roux. Cook the roux, stirring constantly, for about 1 minute.
Add paprika and bay leaves. Pour in cold broth.
When the bean soup starts to boil, reduce the heat and add the soft, cooked beans. Season with salt and pepper and cook uncovered over medium heat for about 20 minutes. Garnish with parsley and serve with bread.
