Rabbit roasted in butter with rosemary and red cabbage
We will cut the rabbit into pieces, wash it, and dry it. We will pluck the rosemary. We will peel the garlic and crush it. We will salt the pieces of rabbit and massage the garlic and rosemary into them.
Ingredients (what you need)
1 rabbit
4 sprigs of rosemary
sea salt
2 tablespoons of oil
100 g of butter
1-2 onions
5 cloves of garlic
Cabbage
1 small head of red cabbage
100 g of smoked bacon
2 smaller onions
1 larger potato
4 tablespoons of granulated sugar
2 tablespoons of vinegar
salt
Recipe steps
We cut the rabbit into pieces, wash it, and dry it.
We pluck the rosemary, peel the garlic, and crush it. We salt the rabbit pieces and mix in the garlic and rosemary needles. We drizzle the sweetened pieces with oil and store them in an airtight container in the fridge, ideally until the next day.
We place butter, sliced bacon, onion cut into half-moons or rings, and pieces of rabbit into a baking dish. Then we cover it with a lid and put it in a preheated oven at 200 °C.
After about half an hour, we add a bit of hot water and cover it again. We bake the meat until tender for about 2 hours, uncovering the lid for the last 20 minutes to give the meat a nice color. The sauce should not be too watery. If it is, we let it reduce on the stovetop.
We cut the cabbage into thin strips either by hand or using a food processor.
In a pot, we place the chopped bacon and fry it until fragrant. Then we add the chopped onion and let it brown. We stir in the finely chopped cabbage, add about 200 ml of water, season with salt, add sugar, add vinegar, and stew until tender.
At the end of the stewing, we stir in the finely grated potato and let the mixture simmer briefly on a low heat. We salt to taste if necessary. We also add sugar and vinegar to taste. The cabbage should be on the sweeter side.
We serve it with any dumplings.
