Pumpkin lasagna

We wash the pumpkin thoroughly and cut it in half lengthwise. We remove the seeds and chop the flesh into small cubes. We take the tomatoes out of the oil, let them drain, and then chop them.

800 g orange Hokkaido pumpkin
10 sun-dried tomatoes in oil
2 onions
2 cloves of garlic
300 ml vegetable broth
salt and pepper
1 tbsp butter
1 tbsp all-purpose flour
250 ml milk
grated nutmeg
16 sheets of lasagna
50 g grated cheese
butter for greasing the baking dish
Recipe steps
Thoroughly wash the pumpkin and cut it in half lengthwise. Scoop out the seeds and chop the flesh into small cubes. Remove the tomatoes from the oil, let them drain, and then chop them into small pieces. Clean and finely chop the onion and garlic. In a large pan, heat 2 tablespoons of tomato oil and briefly sauté all the prepared ingredients. Add 200 ml of broth and cook for about 5 minutes. Season with salt and pepper to taste.
Preheat the oven to 200º C. In a pot, melt the butter, add the flour, and prepare a light roux, which we will then thin out with milk. Let it cook for ten minutes, stirring occasionally, then add salt, pepper, and nutmeg to taste.
First, grease a baking dish with butter. Parboil the lasagna in salted water for 3 to 5 minutes. Then, layer it alternately with the vegetables in the dish, with the last layer being lasagna. Finally, pour the remaining broth and béchamel over everything, sprinkle with cheese, and bake.
