Italian creamy risotto

400 g Arborio rice
1 smaller shallot
50 g butter
extra virgin olive oil
150 ml white wine
2 tablespoons diced celery
1.5 l hot vegetable broth
2 tablespoons finely grated Parmesan, plus for serving
sea salt
freshly ground black pepper
Recipe steps
First, finely chop the shallot and cut the celery into small cubes. In a medium pot, melt half of the butter, drizzling in a bit of olive oil. Quickly sauté the shallot along with the celery.
Add the dry rice. Stir. All the grains should be coated in fat, and the surface of the rice should become translucent.
Immediately afterwards, pour the white wine into the pot, stir, and let the rice absorb the wine and evaporate the alcohol. This process should take no more than 2 to 3 minutes.
Then, slowly add the vegetable broth in small ladles. Gently stir the risotto and allow the vegetable broth to be completely absorbed by the rice over medium heat. Repeat this process until the rice is al dente, roughly 20-30 minutes.
When the rice stops soaking up the broth and is just the right texture, remove the pot from the heat and stir in the Parmesan and the remaining butter. Season with salt and pepper.
Finally, serve it sprinkled with grated Parmesan.
