Pasta with cream sauce and chanterelles

Ingredients (what you need)
2 portions of homemade pasta (store-bought)
1 tablespoon of butter preferably clarified
1 shallot
130 g fresh chanterelles (frozen)
50 ml white wine
10 g Parmesan
100 ml broth (chicken, vegetable)
100 g cream 30%
salt (to taste)
1 pinch of crushed caraway seeds
freshly ground white pepper
fresh thyme (or savory)
Pasta
200 g semolina flour
+ 2 tablespoons for dusting
2 eggs
Recipe steps
To prepare homemade pasta, we mix flour with eggs and create a flexible, non-sticky dough. We then wrap it in foil and let it rest for 1 hour. After that, we roll out the dough and cut it into the desired shapes using a machine or knife.
We cook the pasta in a large amount of water to which we have added salt. We cook the prepared pasta according to the instructions on the package until it is al dente.
We thoroughly clean fresh chanterelles, rinse frozen ones under water, and let them drain. We tear larger pieces into smaller parts.
In a hot pan, we add butter and sauté finely chopped onion. We add chanterelles and sauté them for another two minutes, then deglaze with wine and allow the alcohol to evaporate. We add a bit of broth and simmer for two minutes. Finally, we set the chanterelles aside.
We pour the remaining broth into the pan, add room temperature cream, season with pepper and caraway, and grate parmesan cheese. Over low heat, we stir the sauce occasionally and cook until it reaches the desired thickness.
We serve with pasta that is garnished with fresh thyme or marjoram and chopped parsley.
