2/3 handfuls of dried or fresh mushrooms, finely chopped
salt
pepper
oregano
thyme
marjoram
2 eggs
roux (homemade or store-bought)
mushroom broth (optional)
Recipe steps
In a pot, we add the pasta, whether homemade or store-bought, season with salt, and bring to a boil. In another smaller pot, we pour in about half a liter of water, add the mushrooms; I used dried ones because fresh mushrooms are not available right now. Again, we season with salt and cook.
After about ten minutes, when the mushrooms soften, we transfer some of the water to the pasta - this way, they will take on a beautiful color and absorb the aroma of the mushrooms.
To the remaining water with the mushrooms, we stir in one cooking cream, add rosemary, thyme, oregano, salt, and pepper. Since dried mushrooms do not have as excellent a flavor as fresh ones, we can add mushroom bouillon for better taste (when using fresh mushrooms, bouillon is not necessary) and add two eggs. We mix everything thoroughly, adjusting the spices to taste, and finally thicken the mixture with a roux. We drain the cooked pasta and serve.
