Ingredients (what you need)
3 larger potatoes
3 hard-boiled eggs
1 sausage (or a sausage link)
1 larger carrot
2 stalks of celery (or a piece of celeriac)
2 cloves of garlic
marjoram
1 pinch of crushed caraway seeds
butter
all-purpose flour
1.5 liters of broth (or water)
salt
fresh herbs (parsley, lovage, chives)
Recipe steps
In butter, sauté grated carrots and chopped celery stalks (also grated celeriac).
Add diced potatoes, season with caraway seeds and salt, then pour in water or broth (about 1.5 liters).
When the vegetables are almost soft (after about 10 minutes), stir in fried slices of sausage, chopped or grated eggs, crushed garlic, and marjoram.
In a pot, make a light roux from butter and flour, then let it cool and mix it into the soup. Simmer for another 5 minutes.
Season to taste and set aside. Finally, add fresh herbs.
