We boil the potatoes in their skins, then peel them and mash them while they are still warm.
We add flour, eggs, parsley, and salt to the mixture.
We knead the dough and form it into rolls the size of a finger, which we then cut into pieces about 2 cm long, or we can shape the dumplings using two spoons.
In a pot, we bring salted water to a boil, add the dumplings, and cook them until they float to the surface.
We remove the cooked dumplings with a slotted spoon.
