Potato dough rolls

Ingredients (what you need)
Dough
500 g potatoes (boiled in their skins)
100 g coarse flour
75 g semolina
50 g Solamyl
1 egg
1 tablespoon vinegar
salt
jam
medium flour (for dusting)
For seasoning
butter
ground poppy seeds (or toasted breadcrumbs)
powdered sugar
Recipe steps
The day before, we boil the potatoes in their skins until soft, which takes about 25 minutes.
The next day, we peel the cold potatoes and grate them on a fine grater.
We mix in the remaining ingredients and create a firm dough.
We lightly sprinkle flour on the work surface and roll out the dough to a thickness of 0.5 cm.
We cut the dough into rectangles using a knife, a pastry wheel, or a pizza cutter and fill them with jam. We can also use a round cutter for cutting.
After filling the rectangles or circles, we fold them over and press the edges firmly.
We place the dumplings in boiling salted water and after a moment, we gently stir them with a spoon to prevent them from sticking to the bottom. Once they float to the surface, they are done. The entire process takes about 5 minutes, but it depends on their size.
On a plate, we brush them with melted butter and sprinkle with sugar, poppy seeds, or toasted breadcrumbs.
