200 g of pork tenderloin
2 medium-sized carrots
4 small mushrooms

We cut the tenderloin into thin slices and lightly press them with our palms. We season with salt, pepper, and sprinkle with thyme and rosemary. We place the meat in a bowl, add a tablespoon of olive oil, and let it rest for about an hour.
In a non-stick pan, we melt butter, add the cleaned tenderloin and carrot sliced into rounds. We sauté everything together for about 10 minutes, during which we turn the tenderloin. Then we add sliced mushrooms and sauté for another 5 minutes until the mushrooms soften.
With a little water or broth, we deglaze the mixture and briefly simmer. We serve with mashed potatoes.
