It is meat that willingly becomes tender, and when you season it well, it will be wonderfully juicy. A more pronounced flavor will be enhanced by ham or bacon. You need to start on the side dish earlier because it takes longer. We will start preparing the meat when the potatoes are practically almost soft. If we want to speed up the roasting of the potatoes, we cut them in half and make cuts in the top of each half.

Recipe steps

Medium-sized potatoes are carefully washed and scrubbed with a dish scrubber. The potatoes are cut in half, placed in a baking dish, and brushed with oil that has been infused with rosemary and thyme. They are salted and placed in a preheated oven at 220 °C. We expect the cooking time to be between 45 minutes and one hour; the potatoes must be well-cooked.

The tenderloin is cut into three-centimeter pieces, wrapped in Schwarzwald ham, and secured with a toothpick. They are salted and peppered. In a hot pan, we pour in 1-2 tablespoons of oil and fry the medallions on both sides until golden brown; then we reduce the heat, cover the pan, and let them cook slowly. The medallions must remain tender and juicy.

The medallions are transferred from the pan to a bowl or baking dish and placed in the heated oven alongside the potatoes, which by now should be fully cooked; prolonged exposure to the hot oven would unnecessarily dry out the tender meat of the tenderloin.

In the pan with the drippings, we add a little water, stir it, add grated blue cheese, let the cheese melt, and pour in the cream. We stir until it thickens and remove it from the heat. The drippings must not be burned, as the cheese sauce would take on a bitter taste.

We serve the potatoes on plates, just like the medallions. Any juice that the medallions released can be mixed into the cheese sauce, which we gently drizzle over each serving.
