In a pot, let the butter melt, add olive oil, and once it gets hot, briefly sauté the chopped onion, grated carrot, and celery in it.

Ingredients (what you need)

500 g ground pork
150-200 ml red wine
120 g onion
120 g carrot
120 g celery
30 g butter
4 tablespoons olive oil
just under a tablespoon of tomato paste
200 ml tomato concentrate (homemade tomato sauce di pomodoro)
100 ml broth
salt
ground pepper

Recipe steps

In a pot, melt the butter and add olive oil. Once heated, sauté the chopped onion, grated carrot, and celery. Then stir in approximately 2 tablespoons of broth and simmer slowly for 10 to 15 minutes.

Add the ground meat to the vegetable layer and break it up with a spoon while cooking to eliminate lumps.

Pour in the broth and wine, let it evaporate, and then stir in the tomato paste and salsa.

Mix the mixture, add salt and pepper to taste, and let it simmer loosely for about 2 hours until it thickens.

The pasta can be served with the ragù; it also works well in lasagna and can be served with mashed potatoes. The remaining ragù is simmered for two hours at a temperature of 100 °C, creating a base for future meals.
