Ingredients (what you need)
2 kg of pork lard
100-150 ml of water
100 ml of milk
salt
Recipe steps
Cut the lard into cubes measuring 2x2 cm and place them in a wider pot.
Cover the pot with a lid and start heating the cracklings on low heat. This process takes about 30 minutes. During this time, the cracklings will release the lard.
After 30 minutes, remove the lid and begin to stir the cracklings regularly. Once they start to stick to the bottom, add approximately 50 ml of water and continue rendering. This process takes about 1.5 to 2 hours.
During the rendering, it is possible to occasionally add a little water, about 1 to 2 times.
When the cracklings start to float in the fat, strain them through a sieve, return them to the pot, and continue frying.
When the cracklings turn golden brown, add milk and wait for the milk to completely render out. The milk will darken the cracklings and give them an excellent flavor.
At the end, strain the cracklings again, let them drain, and cool down.
Salt the cracklings just before serving.
Pour the remaining lard into jars and let it cool completely. Then store it in the refrigerator for later use.
