300 g pork neck (or shoulder)
100 g bacon
20 g lard
salt
freshly ground pepper
1/2 teaspoon crushed caraway seeds
100 g onion
220 g Brussels sprouts
broth for moistening (as needed)
3-4 cloves of garlic
Recipe steps
We wash the meat and cut it into chunks, the bacon into small cubes. We cut the onion in half, peel it, and chop it roughly. We clean the Brussels sprouts and cut them in half.
In a heated deep skillet, we add lard and bacon, allowing the fat to render out. Then we add the onion and lightly salt it. Once the onion softens and begins to turn golden, we sauté it, stirring constantly until it reaches a darker golden color.
We add the salted and peppered meat and stir it occasionally until it browns on all sides. Then we add caraway seeds and Brussels sprouts, stir everything together, and pour in about 150 ml of hot broth. We bring it to a boil, then lower the heat and simmer covered.
We stir as needed, adding broth, and simmer until the meat is tender, which takes about 40-45 minutes. Finally, we mash the mixture, stir in the garlic, let it cook for another minute, and then remove from heat.
The onion has taken care of the thickening and flavor; we adjust the salt to taste and serve with potato dumplings, boiled potatoes, or pasta.
