Ingredients (what you need)
4 pork chops (or neck meat slices)
1 slice of celery
1 parsley root
1 larger carrot
1 onion
all-purpose flour
sweet paprika
salt
pepper
1 bay leaf
1 tablespoon of lard or oil
broth (water with a piece of bouillon cube)
Recipe steps
Gently pound the meat and make small cuts on the bones and around the edges. Season both sides with salt and pepper, dust one side with flour and the other with mild sweet paprika. Finely dice the root vegetables (onion, carrot, celery, parsley).
In a pan, heat the fat and quickly brown the meat on both sides, then remove it. Add the chopped onion and vegetables to the fat, sauté them, and pour in about 3 dl of hot broth or water. Transfer the contents of the pan to a baking dish or casserole, add the bay leaf, place the browned meat in, and cover it. Bake in a preheated oven for about 20 minutes at 170 degrees. Then remove the lid, add broth or water as needed, and bake uncovered for about 30 minutes, increasing the temperature to 180 degrees.
Remove the tender meat and add liquid to achieve the correct amount, then thicken with a darker roux made from lard. Boil well, return the meat to the sauce, allow it to heat through, and then serve. Various sides, such as bread or potato dumplings, potatoes, pasta, or rice, are suitable for the dish.
