1 kg pork neck
3 medium onions
250 g fresh mushrooms
full-fat mustard
ground cumin
salt
pepper
sweet paprika
plain flour for thickening (or ready-made roux)
oil or lard
Recipe steps
Finely chop the onion and fry it in oil or lard. Cut the meat into pieces or slices, pound it, season with salt and pepper, and lightly coat it with full-fat mustard.
Place the meat on the fried onion, sprinkle with ground caraway and sweet paprika. Add a little water and briefly simmer.
After about fifteen minutes, add water and cook until tender. Once the meat is tender (in about an hour), add the chopped mushrooms and cook for another 20 to 30 minutes. Finally, thicken the sauce with a roux or plain flour and serve with rice or bread dumplings.
