Pea soup with sausage (yellow peas)
In oil, sauté finely chopped onion and cook over medium heat until softened. Then add diced other ingredients, such as bacon.
Ingredients (what you need)
500 g of yellow split peas in a bag (peeled and split)
200 g of lean English bacon
2 medium onions
3 cloves of garlic
1 Hungarian sausage (or another type)
1 medium carrot
3 bay leaves
2 allspice berries
5 black peppercorns
3 tablespoons of oil (or a small cube of lard)
1 cube of vegetable bouillon
optionally croutons or something else for garnish
Recipe steps
In diluted oil, lightly sauté finely chopped onion and cook it over medium heat until it becomes translucent.
Add diced ingredients – bacon, garlic, sausage – and sauté them for a while.
Set aside two-thirds of the mixture, which we will add almost at the end, after "blending".
Someone may lightly sprinkle Hungarian paprika before the next step, but only for a short time to prevent it from becoming bitter. Then, add 1.5 liters of broth or water with a dissolved vegetable bouillon cube.
After pouring in the broth, add rinsed peas, bay leaves, allspice, black pepper, chopped carrots, and basil, salt to taste, and cook until the peas are tender.
Remove the bay leaves, allspice berries, and black peppercorns if we find them.
Blend everything left in the pot with an immersion blender until smooth like cream!
Add the sausages, English bacon, garlic, and onion to the mixture and simmer everything together lightly.
Before serving, we can garnish according to family traditions. (croutons/asparagus/toasted rolls or bread/...)
