Spinach soup with cream and egg

We peel the onion and finely chop it. Then we sauté it in a pan with butter. We add flour and stir, which creates a roux, then we add either broth or 3/4 liter of boiling water with 1 bouillon cube. We bring it to a boil and add the defrosted spinach, chopped roughly.

2 dl cream
2 tablespoons butter
ground pepper
1 piece onion
2 - 4 pieces eggs
1 package frozen spinach
1 cube bouillon
parsley
salt
3 tablespoons all-purpose flour

Recipe steps

We boil the soup for about 10 minutes. We pour in the cream, let it boil, and season it with pepper and salt.

To the finished soup already served in a bowl, we add sliced hard-boiled eggs. We can also add whisked eggs and let them curdle in the soup. Finally, we sprinkle with chopped parsley.

Spinach can be replaced with broccoli or leek.
