Horseradish sauce

This sauce has a great flavor thanks to the strong grated horseradish. With dumplings and boiled smoked meat, it will be a great and hearty lunch.
Ingredients (what you need)
1 l full-fat milk
250 ml cream (33%)
50 g butter
2 tablespoons all-purpose flour
20 cm horseradish (fresh root)
salt
white pepper
lemon
Recipe steps
In a pot over low heat, melt the butter and add the all-purpose flour. After mixing, roast it for a while until a light butter roux is formed. Then pour in cold milk and mix thoroughly to create a smooth mixture without lumps.
We will cook for about 15 minutes while constantly stirring, as the sauce tends to stick easily. At the end of cooking, add finely grated horseradish.
Next, add the cream and let it simmer gently for a few minutes, about 5 minutes.
Finally, adjust the sauce to your liking - you can add lemon for acidity, enrich it with a piece of butter, season with salt and pepper, and optionally add freshly grated horseradish.
We serve it with boiled smoked meat, bread or Karlovy Vary dumplings, and lightly sprinkled with freshly grated horseradish.
