Ginger cookies

Ingredients (what you need)
110 g butter (soft)
100 g brown sugar
1 egg white (from a large egg)
1 teaspoon vanilla extract
1 tablespoon honey
1/2 teaspoon cinnamon
1.5 tablespoons ground ginger
170 g all-purpose flour
1 teaspoon baking soda
1 pinch of salt
granulated sugar (for coating)
Recipe steps
Beat the butter with the sugar until light and fluffy, then mix in the extract, egg white, and honey, and whisk until smooth.
In another bowl, mix all the dry ingredients thoroughly.
Gradually add the mixture and whisk thoroughly until the dough reaches a homogeneous but still slightly sticky consistency.
Wrap in plastic wrap and refrigerate for at least 30 minutes.
Preheat the oven to 180 degrees and line the trays with baking paper.
Once the dough is removed, form balls that are slightly larger than 1 cm, and place them with adequate spacing.
Put sugar in a bowl and coat all the balls in it. Finally, gently press them down with your thumb and bake for 8-10 minutes until the edges turn golden.
