Ingredients (what you need)
Dumplings
400 g of cooked potatoes
500 g of raw potatoes
200 g of coarse flour
1 egg
salt
Sauerkraut
1 jar of sauerkraut
1 onion
1 tablespoon of all-purpose flour
oil (as needed)
100 g of granulated sugar
1 peeled tomato
1 pinch of caraway seeds
1 pinch of salt
To finish
500 g of cooked smoked pork belly
1 large onion fried to golden brown
Recipe steps
We add the cabbage to lightly sautéed onions, then add chopped tomatoes, caraway seeds, sugar, and salt, and sauté for a while.
We pour in a little water and simmer until softened for about an hour. Then we let all the liquid evaporate, sprinkle a spoonful of smooth flour, and sauté briefly again.
We mash or grate the cooked potatoes in a bowl.
We grate the raw potatoes and rinse them several times with cold water through a fine sieve. Then we squeeze them out and mix them with the cooked potatoes.
We mix flour, eggs, and salt into the potato mixture and knead it into a firm dough.
From the dough, we form small balls and cook them in boiling water. Cooking takes about 8 minutes.
We take the cooked pieces with a slotted spoon and immediately place them into the warm cabbage.
We add chopped smoked meat and sautéed onions to the mixture and mix thoroughly.
