Gnocchi with brynza, gnocchi with cabbage and generally gnocchi as a recipe have become established in our Czech basin. Gnocchi actually come from Slovakia, where they play a role as the national dish. When you add grated potatoes to the dough, you get a dish called strapačky. Gnocchi can also be served with poppy seeds or plum butter, but by far the most popular are gnocchi with brynza.
The recipe for gnocchi is hearty and very filling, making it perfect for the winter season, as it reliably keeps you warm. Gnocchi and their recipe are also very simple, so that even many beginner cooks can master it. This recipe is for gnocchi with brynza and bacon.

Ingredients (what you need)

750 g potatoes
250–300 g all-purpose flour
150 g bryndza
100 g bacon
oil
salt

Recipe steps

First, peel and grate the potatoes on a fine grater. Salt them and add flour. This will create a dough that should ideally be sticky.

In a larger pot, bring water to a boil. Then, push the dough through a strainer with large holes into the water. Once they float to the surface, let them cook for 5 to 7 minutes. Then, remove them with a strainer. Do not cook all the dumplings at once; divide them into batches, for example, three times, so they don’t crowd in the pot and cook evenly.

While the dumplings are cooking, fry diced bacon in a small amount of heated oil. Then, mix the still-warm dumplings directly in the pan with the bacon, bryndza, and bacon. Serve immediately.
