Ingredients (what you need)
120 g of pork cracklings
500 g of all-purpose flour
180 g of lard
125 ml of milk (or more, as needed)
20 g of yeast
1 egg
1 pinch of sugar (for rising)
2 level teaspoons of salt (around 10 g)
ground pepper
2 tablespoons of white wine (optional)
1 egg for brushing
For sprinkling
coarse salt
crushed caraway seeds
Recipe steps
Line the baking tray with baking paper.
Prepare the yeast. Pour warm milk into a bowl, add crumbled yeast, a pinch of sugar, and two tablespoons of flour (from the measured amount). Mix everything well and let it rise in a warm place.
Cut the cracklings into small pieces.
In a bowl, place the sifted flour, pieces of lard, salt, and pepper.
Stir in the risen yeast, egg, chopped cracklings, and wine (if someone prefers, they can use only water). Mix well until a smooth dough forms, cover it with a cloth, and let it rise thoroughly for about an hour.
Form the dough into balls, or you can roll it out and cut circles. Place these balls with larger gaps on the baking tray lined with baking paper. Flatten the balls with your palm into patties, or you can press them with a potato masher to create decorated patties.
Brush all the patties with beaten egg, sprinkle them with coarse salt and crushed caraway seeds. Then, place them in an oven preheated to 190 °C and bake until they turn golden brown.
