Coconut macaroons

Preparing delicate and soft coconut cookies is a true art. However, with our simple recipe, you can easily accomplish it. Just follow a few instructions, and you might fall in love with the coconut cookies...
Ingredients (what you need)
3 egg whites
210 g fine granulated sugar
100 g grated coconut
1 teaspoon strawberry jam (or to taste - apricot, blueberry)
Recipe steps
In a pot large enough to hold a mixing bowl, pour in water. The water should not touch the bottom of the mixing bowl.
In a bowl, add the egg whites and whip them into a light foam.
Pour water into the pot and bring it to a boil. Then reduce the heat and place the bowl with slightly whipped egg whites on the pot. Gradually add sugar to the egg whites, whisking and heating at the same time. The sugar should completely dissolve in the egg white foam, and the foam should reach a temperature of around 45-50 °C. We can check the temperature with a kitchen thermometer. If we don't have one, we can dip a finger into the foam—if it feels pleasantly warm and firm, it is ready.
Remove the bowl from the water bath and continue to whisk the foam until it cools down. Then gently fold in the coconut and jam.
Preheat the oven to 130-140 °C. Line a large flat baking sheet with parchment paper.
Using two teaspoons, form small mounds of the coconut mixture and place them on the lined baking sheet. With one spoon, scoop the mixture, and with the other, shape it into neat mounds, which are then placed on the baking sheet.
Bake slowly for about 15-20 minutes until they develop a pink hue. If the coconut macaroons start to brown too soon, reduce the temperature by 10-20 °C.
Allow to cool on the baking sheet and then transfer them to paper bags, keeping them in a dry and cool place.
