40 g vanilla sugar
2 tablespoons vanilla pudding
2 yolks
additional flour for dusting
1 egg for brushing
50 g almonds for topping
Recipe steps
First, mix the yeast with a little sugar to make a paste. Then add the other ingredients – lukewarm milk, flour, salt, egg yolks, clarified butter, lemon zest, and raisins soaked in rum.
Now knead a soft dough. Dust the sides of the bowl and the kneaded, beautifully soft dough with flour, cover it with a cloth, and let it rise in a warm place for at least an hour. Don't forget to mix the dough once during this time.
Then sprinkle flour on the rolling surface. Place the dough on it and cut it in half. Roll both halves into strips, just like you would for a strudel. Place cottage cheese in the center, brush the edges with beaten egg, and roll it up.
Then carefully braid both parts into a wreath shape. (Tip: place a buttered mold or cup in the center of the wreath so that the dough doesn't join in the middle). Then brush the wreath with egg and sprinkle with chopped almonds.
Bake in an oven preheated to 170 degrees Celsius. It will take about 45 minutes. After cooling, sprinkle with powdered sugar.
