Ingredients (what you need)

1 kg of beef
about 100 g of butter
1 tablespoon of oil
salt
about 400-500 g of pitted cherries
250 ml of whipping cream
all-purpose flour

Additionally, to taste
cinnamon
white wine - sweeter
cloves
lemon zest
lemon juice

Recipe steps

Beef, whether from the front or back part, should be salted and quickly seared in a mixture of melted butter and oil. Then we add water, salt again, and braise until the meat is tender. Once the meat is soft, we remove it to a plate and finish the sauce.

The flavor of the sauce depends on the personal preferences of the cook and also on how sweet and ripe the cherries are.

While braising the meat, we can enrich the sauce with white wine, using approximately 2 deciliters.

To the broth, we add cherries, and if they are ripe, sweet, and fragrant, they need only a brief boil, after which we mix in cream combined with smooth flour to thicken the sauce. Then we let everything simmer for a while, and we are done. If we prefer a spiced sauce, we can add a bit of cinnamon, 3-4 cloves, and a piece of freshly grated lemon zest to the cherries. If the cherries are too sweet, we can also incorporate a little lemon juice into the sauce after adding the cream.

The meat we set aside is sliced and placed in the sauce to warm up.

Serve with dumplings or bread dumplings.
