Ingredients (what you need)
225 g all-purpose flour
100 g butter
25 g grated Parmesan
a pinch of cayenne pepper (or ground chili)
FOR THE FILLING
1 tablespoon olive oil
1 large onion (sliced into thin rings)
200 g bacon (diced)
2 eggs
300 ml heavy cream
4 tablespoons milk
100 g grated Cheddar cheese
Recipe steps
Mix the flour, butter, Parmesan, and cayenne pepper, and add enough water to bring the ingredients together. Knead the dough thoroughly until smooth, then roll it out and line a 23 cm diameter pie dish with it. Cover with plastic wrap and let it chill for 30 minutes.
Meanwhile, set the oven to 200 degrees, or 180 for fan-assisted. Remove the wrap from the chilled dough, place it on baking paper, and weigh it down with beans (either real, dried, or ceramic) and bake for 15 minutes.
Remove the beans and paper, return the dish to the oven, and bake uncovered for 5 to 10 minutes until lightly browned. Then remove and let the dough cool. Lower the oven temperature to 150 to 130 degrees.
In a pan, heat the oil and sauté the onion until soft, and the bacon until golden. Then spread the mixture over the dough and sprinkle with half the cheese. In a bowl, whisk together the eggs, cream, and milk, and evenly pour this mixture over the pre-baked dough. Finally, sprinkle with the remaining cheese. Bake for 35 to 40 minutes until the filling is set and browned.
