Ingredients (what you need)

100 ml lukewarm milk
4 heaping tablespoons of tartar sauce or mayonnaise, but the batter is more flavorful with tartar sauce
4 potatoes cooked in their skins, cooled and peeled
1 teaspoon of salt
400 ml all-purpose flour
20 g yeast

oil for greasing the baking dish
a mixture of coarsely grated hard cheeses for sprinkling, about 150 g in total (I had blue cheese, Gouda, and smoked Edam)
a sprig of fresh thyme or a little dried thyme

Recipe steps

I prepared the dough in the bread maker, but it can also be processed by hand.

We put milk, tartar sauce, salt, finely grated potatoes, flour, and crumble yeast on top into the bread maker. We let the machine knead the dough, which should be a bit thinner due to the potatoes than regular yeast dough. We turn off the bread maker and let the dough rise, covered, for about 30 minutes.

Thoroughly grease a glass pie dish with oil and transfer the risen dough inside using a spatula. With the help of oiled hands, we spread it evenly and sprinkle the cheese mixture on top, finishing with a few thyme leaves.

We bake at 175°C for about 45 minutes.

We can serve it warm as a main dish, for example with a vegetable salad or fruit compote (plums are excellent). However, the pie is also tasty cold, for instance as an accompaniment to soups.
