4 salmon fillets with skin (each about 150 g)
8 thin slices of lemon
1 spring onion
2 cloves of garlic
sea salt
ground black pepper
olive oil
1/2 leek
4 sprigs of rosemary
dried thyme
1 red onion
1/2 zucchini
8 baby tomatoes
Recipe steps
We season the salmon fillets with salt, pepper, and thyme on both sides.
We slice the washed zucchini, the leek, halve the tomatoes, and cut the garlic and onion into wedges.
We prepare four pieces of aluminum foil. On each piece, we place a piece of salmon, add a sprig of rosemary, half a garlic bulb, two onion wedges, two tomato halves, two slices of zucchini, two slices of lemon, and drizzle with olive oil. Then we wrap them up and place them on a baking tray or in a baking dish.
First, we preheat the oven to 210 °C, and then we place the packets inside, which we bake for about 20-25 minutes, depending on the thickness of the fillets.
I served it with roasted potatoes.
