6 potatoes

3 eggs

150 g grated cheese (I used Grattugiato Fresco – see photo, Parmesan, Edam, etc. can be used)
5 tablespoons spelt flour (can also be semi-coarse)
3 smoked chicken thighs (or other smoked)

Cooked potatoes are mashed into a puree, warm milk and melted butter are added, and grated cheese is mixed in. We separate the yolks from the whites, whisk the yolks, and add flour. We beat the egg whites into a stiff foam and gently fold it into the potato puree. It should have the right consistency, neither too runny nor too stiff.
We grease a baking dish and fill it with the puree. In a preheated oven at 150°C, we bake for about 20 minutes. We shred the smoked chicken and cut it into pieces. We push the puree to the sides and place the meat in the center, then bake for another 10 minutes until the puree starts to turn pink. Serve with fresh vegetables.
