Onion Quiche

From water, flour, butter, and a pinch of salt, we prepare a dough that we let rest in the fridge overnight. If we are in a hurry, we let the dough rest for at least 1 hour.
Ingredients (what you need)
Provencal herbs
Filling 150 g Gouda
250 g Cream
Olive oil
2 pcs Egg yolk
White wine
Ground black pepper
150 g Bacon
6 pcs Large onion
To taste Salt
As needed Olive oil for greasing
Dough 1 pinch Salt
100 ml Lukewarm water
300 g Plain flour
125 g Butter
Recipe steps
In a hot pan with oil, we add sliced onion to fry. We add finely chopped bacon and deglaze with white wine. We fry until the wine evaporates, then remove from the heat and let cool. We take the onion and bacon out of the oil, season with Provencal herbs, salt, and pepper.
Now we take the dough and roll it out to a thickness of about 0.5 cm. We take a pie dish, grease it with olive oil, and line it with the rolled-out dough, including the sides. We prick the bottom with a fork.
Meanwhile, we coarsely grate the cheese, to which we add the egg yolks and cream. We then mix all of this with the onion mixture. We pour this mixture into our prepared dish and place it in a preheated oven at 180°C, baking for about 35 minutes.
After taking it out, we let the quiche cool down a little, and it is ready to serve.
