The recipe for yeast fruit dumplings with apricots is quite simple, just make sure to follow a few rules, and success will be yours. Play with the dough and let it rise for a full hour. There should be no air in the dumplings, and if you have too little fruit, make a simple cold sauce from it.

Ingredients (what you need)

100 ml lukewarm whole milk
15 g fresh yeast
30 g granulated sugar
250 g semolina flour
a pinch of salt
25 g butter
1 egg
about 20 ripe apricots
powdered sugar for coating apricots
1 cottage cheese for grating
powdered sugar for sprinkling
melted butter for pouring

Recipe steps

First, crumble the yeast and 1 teaspoon of sugar into lukewarm milk. Leave it in a warm place until the yeast rises, which will take about 10 minutes. In the bowl of a mixer, combine the sifted flour with a pinch of salt, the remaining sugar, melted butter, and an egg. Also add the yeast mixture to the bowl and let the mixer work until you achieve a beautifully smooth and fluffy dough that does not stick to the sides of the bowl.

Cover the dough and let it rise for at least an hour. It should double in size. Place halved apricots into the cut pieces of dough and shape them into dumplings. If the fruit is sour, you can add a little powdered sugar into the dumpling. Let the finished fruit dumplings rest under a towel for another 10 minutes.

Steam the fruit dumplings in a pot with a steamer. This will take about 18 minutes. Once cooked, poke the dumplings with a toothpick. On a plate, sprinkle them with crumbled quark, powdered sugar, and drizzle with clarified butter.
