Ingredients (what you need)
Dough
400 g all-purpose flour
120 g butter
250 g cottage cheese in a tub
1 egg
50 g sugar
2 tablespoons vinegar
1 baking powder
Filling
1.2 kg peeled apples
100 g breadcrumbs
50 g butter
40 g cornstarch
40 g vanilla sugar
40 ml rum
10 ml lemon juice
1-2 teaspoons cinnamon
20 g butter and 20 ml rum for brushing
Recipe steps
In a bowl, we mix flour, baking powder, and a pinch of salt and create a well. Into it, we add cottage cheese, an egg, sugar, and vinegar. Soft butter is distributed around. With our hands, we knead a smooth and elastic dough, which we put in the refrigerator for an hour.
In butter, we toast breadcrumbs until golden brown and then let them cool. We slice the apples into thin slices and mix them with the toasted breadcrumbs, starch, cinnamon, sugar, lemon juice, and rum.
We divide the relaxed dough into two parts. Each of them is rolled out into a rectangle, the thinner, the better. We evenly spread half of the filling onto each sheet. We fold the edges inward so that the filling does not leak. Then we roll the strudel and carefully transfer it to a baking sheet lined with parchment paper.
We bake for about 40 minutes at 180°C. After baking, we brush the surface with melted butter mixed with rum. We let it cool and sprinkle with sugar. It is best served with ice cream; personally, I like the combination with walnuts.
