If we do not have simple syrup, we can easily make it by briefly boiling equal parts of water and sugar and then letting it cool. We can also prepare a larger quantity of syrup.

Ingredients (what you need)

300 g of watermelon flesh
15-20 g of sugar syrup (to taste)
lemon juice (to taste)

Recipe steps

If we don't have sugar syrup, we can make it by mixing equal parts water and sugar and briefly boiling them, then letting it cool. We can prepare a larger quantity, for example, from 300 ml of water and 300 g of sugar, which will ensure that we always have syrup available in the refrigerator. We can also use it to sweeten cold drinks.

Cut the flesh of the watermelon into small pieces, and if we have a seedless watermelon, remove the seeds.

Blend it, we can use a food processor. Add sugar syrup and a bit of lemon juice to taste. Some watermelons are sweeter, others less so.

Transfer the blended watermelon to a shallow container with a lid and store it in the freezer. It is recommended to freeze in a thinner layer. Every 45 minutes, stir the mixture and put it back in the freezer. At the beginning, a spoon is sufficient, but later we use a fork. We try to keep the ice crystals coarser and not crush them completely fine. The total preparation time takes about 4.5 to 5 hours.

Serve the granita in a small cup; it is a great refreshment for summer.
