about 20 radishes
half a small cauliflower
about 15 cm of leek, if we have nice green leaves, we can add them as well
1 onion
half a red and half a green bell pepper
1-2 cloves of garlic
1 cooking cream
1 cheese with ham flavor and 1 paprika flavor (other types can be used) see NOTE
about 50 grams of blue cheese (can be omitted or substituted..) see NOTE
a few cherry tomatoes for the finished soup
1-2 tablespoons of flour for thickening
oil
broth
parsley, dill, or other herbs from the garden
For seasoning
salt
pepper
possibly vinegar or a tablespoon of sour cream
Recipe steps
Wash the vegetables and cut them into small pieces. Sauté the chopped onion and garlic in fat, then add the vegetables. Sauté for about 6 minutes. Pour in the broth (preferably vegetable) just to cover the vegetables, and simmer for about 16 minutes until the vegetables are tender. Season with pepper, but be cautious with salt due to the cheese.
Blend, add cream mixed with flour, and cook for another 15 minutes.
Add the cheeses to the mixture and stir until melted. Then add the chopped radishes and a few cherry tomatoes, and if desired, you can also add parsley. Turn off the stove and mix it again.
Season to taste and let it sit for about 7 minutes for the flavors to meld, and then serve. The combination of cherry tomatoes, radishes, and other vegetables with the cheeses creates an interesting mildly spicy flavor. I did not season it further.
