Recipe steps
We grind all the cleaned vegetables using a meat grinder. Then we thoroughly mix the ground mixture with salt in a large bowl and let it rest in a cool place for 24 hours.
We pour the mixture into jars, trying to expel as much air as possible, pack it tightly, and seal it with lids. The prepared mixture will last until spring if stored in a cool place.
The mixture has a more pronounced salty taste, so when seasoning sauces and soups, I usually use less salt beforehand. Usually, 1-2 tablespoons is enough for an entire dish or 2 liters of soup.
