750 g veal leg
50 g butter
salt
pepper
2 white rolls
2 eggs
2 cloves of garlic
1 onion

20 ml extra virgin olive oil

Recipe steps
First, we will make the filling. We separate the yolks from the whites, beat the yolks with butter and salt. Then we add the chopped rolls. We whip the egg whites into stiff peaks and fold them into the mixture. Finally, we add nutmeg, pepper, and chives.
We cut the veal leg, spread it out into a larger piece, gently pound it, and season it with salt and pepper.
We fill the veal leg with the filling, add a sausage, wrap it up, and then stitch it or secure it with thread.
In a pan, we heat butter with oil, add onion and garlic. Then we sauté the veal roulade until golden brown and finally add boiling water.
We place the dish with the veal in an oven preheated to 200°C and bake it for one hour. Afterwards, we garnish with chives and serve with mashed potatoes.
