28 slices of peeled zucchini
2 cloves of garlic

1 red sweet pepper
1/4 onion
1 tablespoon of chopped parsley
80 g smoked cheese 45%
1 egg yolk
salt
ground pepper
7 slices of ham
For coating
plain flour
1 egg
1 egg white
salt
bread crumbs
oil for frying
Recipe steps
Peel the zucchini and slice it into 5 mm thick rounds, then place them in a bowl. Add the garlic crushed with 1/4 teaspoon of salt and mix everything together. Clean the pepper and onion, blend them finely, and add them to the bowl. Then add the yolk, finely grated cheese, chopped parsley, salt, and ground pepper to the mixture. Stack the slices of ham on top of each other, cut them into quarters, stack them again, and trim the edges, which we add to the filling and mix well.
Place the zucchini slices on a plate; do not let them sweat. On each slice, place a piece of ham, spread some filling over part of the rounds, and cover with the other half of the slices with ham. Coat the zucchini in flour, then in beaten egg with the white, and finally in breadcrumbs. Then fry it in oil until golden brown. Place the fried zucchini on a baking sheet lined with parchment paper and put it in a preheated oven at 150 °C for 15 minutes, turning it halfway through. I do this so that the zucchini is soft, but some prefer it straight from the pan. I prepare it according to everyone's taste.
Serve the zucchini schnitzels either on their own or with potatoes.
