Strawberry sponge cake with quark

We wash the strawberries and cut them into pieces. We mix the remaining filling ingredients well in a bowl. We also prepare the crumble quickly; it just needs to be worked with for a short while.

150 g yogurt
100 ml milk
120 g oil
120 g sugar
2 eggs
250 g spelt flour
5 g baking powder
2 g baking soda
Filling
250 g fresh strawberries
250 g tub-style cottage cheese
20 g sugar
20 g cornstarch
10 ml rum
Crumble
30 g butter
30 g flour
25 g sugar
cinnamon to taste
Recipe steps
We wash the strawberries and cut them into small pieces. We thoroughly mix all the other filling ingredients in a bowl. We quickly prepare the crumble by briefly combining the butter, flour, sugar, and cinnamon. We set the oven to 180°C and line a baking sheet measuring 20x30 cm with baking paper.
In a bowl, we thoroughly mix all the liquid ingredients, including the sugar, and then we sift the flour, baking powder, and baking soda into the mixture. We pour the finished batter onto the baking sheet, add the filling with a spoon, and sprinkle with strawberries and crumble.
We baked for 20 minutes, then reduced the temperature to 160°C and baked for another 20 minutes.
