Ingredients (what you need)
1-4 pcs white toast bread
1-4 pcs tomato
1-4 pcs egg
to taste ground black pepper
fresh coriander
salt
as needed extra virgin olive oil
1 teaspoon vinegar
Recipe steps
First, we prepare a toast from white sandwich bread, onto which we spread a halved tomato and drizzle with some good olive oil. We take another tomato, slice it, arrange it on the toast, and lightly salt it.
Next, we prepare a poached egg by pouring water and vinegar into a pot and bringing it to a boil. Very carefully, we let the cracked eggs drop into the boiling liquid one by one.
We cook for about 4 minutes, remove them, trim the frayed ends, rinse them in cold water, and let them cool down.
We then place the prepared poached egg on the toast with tomato, drizzle again with olive oil and lightly salt and pepper with freshly ground pepper. We sprinkle the egg with chopped coriander leaves. Finally, we poke into the egg to let some of the yolk run out.
This prepared Spanish toast can be served either as a starter or as a breakfast.
