Shrimp with butter-vanilla sauce

Appetizer originating from Luxembourg. The recipe is for 4 people.
Ingredients (what you need)
1 tablespoon olive oil
12 pcs shrimp
for garnish 4 sprigs chervil
sauce 30 ml dry white wine
1 pcs vanilla pod
30 ml French vermouth Noilly Prat
1 tablespoon orange juice
1 pcs shallot
60 g butter
1 pinch salt and white pepper
Recipe steps
After rinsing the fresh shrimp, we remove the heads, peel the tails, but leave the last ring of shell with the tail fin. We make a longitudinal cut along the back of the shrimp and pull out the black intestine.
Finely chop the shallot and sauté it in a small pot with a mixture of vermouth Noilly Prat (which cannot be replaced with anything else) and white dry wine. Cut the vanilla pod in half lengthwise, scrape out the insides, and add it along with the pod to the boiling wine at the end. Again, natural vanilla cannot be replaced. Add a pinch of freshly ground pepper and salt. Cook until there are about 1-2 teaspoons of liquid left in the pot.
Over low heat, add well-chilled butter in small pieces and gradually stir it in. Always wait until the previous piece is completely melted. Continue this way until the sauce thickens. Once you add the butter, do not cook the sauce anymore! Next, add a tablespoon of orange juice. Let the finished sauce sit covered for a few minutes.
Meanwhile, heat a pan with olive oil and quickly sear the carefully dried shrimp tails on each side for about 30 seconds.
Prepare 4 small plates and pour warm sauce from which we have removed the vanilla pod. Place the shrimp on these plates with sauce and garnish with a small sprig of chervil. Serve with lightly roasted (preferably in the oven) bread.
I recommend some good dry wine to drink.
