Ingredients (what you need)

1 rabbit
1 large onion
4-5 cloves of garlic
2 carrots
3 larger mushrooms
250 ml light beer
Marinade
5 tablespoons oil
1 tablespoon tomato paste
1 tablespoon coarse mustard
1 teaspoon Dijon mustard
150 ml water
salt
pepper
cayenne pepper

Recipe steps

We salt and pepper the rabbit meat and let it marinate for a while. In the meantime, we prepare a mixture of oil, tomato purée, mustard, and water. We chop the onion and garlic and add them to the marinade.

We thoroughly soak the rabbit in the marinade and store it in the fridge overnight. Two hours before baking, we take it out of the fridge to allow it to reach room temperature.

We chop the carrot and mushrooms into smaller pieces. In a baking dish, we place the rabbit with the marinade, add the chopped carrot and mushrooms, and pour beer over it.

We cover the baking dish and place it in a preheated oven at 220 degrees Celsius. We bake for 10 to 15 minutes, then reduce the temperature to 150 degrees and slowly bake for about 2 hours, until everything is tender.

During baking, we occasionally baste the meat with the juices. At the end of baking, we uncover the baking dish and finish cooking the meat to achieve a nice color. We serve it with rice or pasta.
