Ingredients (what you need)
1 kg potatoes
260-300 g smoked meat
2 larger peeled onions
lard
3 cloves of garlic
2 eggs
2 yolks
salt
For coating
200 g all-purpose flour
3 eggs
150 g breadcrumbs
lard or oil for frying
Recipe steps
Boil the potatoes in their skins and let them cool. Cut the meat into small cubes and finely chop the onion.
In a pan with hot lard, sauté the onion, then stir in the smoked meat and fry them together until golden, finally letting it cool.
Peel the potatoes and grate them finely. Then add the eggs, yolks, garlic, and the cooled onion with meat, mixing everything thoroughly. Finally, season with salt and pepper to taste.
Let the potato mixture chill in the refrigerator for at least 2 hours. Then, shape the mixture into patties by hand, coat them in breadcrumbs, and fry on both sides until golden brown.
