Recipe steps
We cook the potatoes with the skin on, peel them, and pass them through a ricer while hot.
We add flour, eggs, parsley, and salt to the mixture.
We knead the dough and form it into rolls the thickness of a finger, which we then cut into pieces about 2 cm long, or we can shape the gnocchi using two spoons.
In a pot, we bring salted water to a boil, add the gnocchi, and cook until they float to the surface.
We remove the cooked gnocchi using a slotted spoon.
