Ingredients (what you need)

1 cup of green mung beans
2 smaller carrots
3 stalks of celery
1 tablespoon of clarified butter (I use Czech ghee)
1 larger onion
2 cloves of garlic
1.5 liters of vegetable broth
1/2 teaspoon of ground ginger
1/2 teaspoon of curry
coarse sea salt

Recipe steps

Place the beans in water and let them soak preferably overnight. In a pot, sauté finely chopped onion and crushed garlic in clarified butter.

After a while, add diced carrots, celery, ginger, and curry. Pour in the broth and cook for about 10 minutes.

Drain the beans and add them to the soup. Cook for another 35-40 minutes until the beans are tender. At the end, salt the soup and you can serve it.
