Ingredients (what you need)
4 tablespoons of oil
2 onions
1 large clove of garlic
1/2 teaspoon of whole cumin seeds
1/2 teaspoon of ground cumin
2 teaspoons of curry
1 teaspoon of ground coriander
1/2 teaspoon of ground cinnamon
5 cloves
300 g of brown lentils
vegetable broth (or water)
1 bay leaf
salt
ground pepper
120 g of tomato paste
1 teaspoon of flour for thickening (optional)
Recipe steps
We select the lentils and leave them soaked in cold water overnight.
We remove the onion's skin and chop it finely. We peel the garlic and crush it.
In a pan, we heat oil and sauté the onion in it. After two minutes, we add the garlic and whole cumin seeds. Once the onion turns yellow, we add curry, ground cumin, and coriander and sauté until the onion turns golden. Finally, we stir in the cinnamon, cloves, and lentils.
We briefly sauté everything and then pour in broth or water so that the liquid is approximately 2 cm above the lentils. We add a bay leaf, a pinch of pepper, and about half a teaspoon of salt.
We bring it to a boil and stir occasionally, cooking for about 15 minutes.
Then we stir in the tomato paste and let it cook for another five minutes. We can add water as needed.
When the lentils are soft and most of the water has evaporated, we remove the cloves and bay leaf.
We can thicken it with flour mixed with a small amount of water. We salt to taste. We serve it with bread or rice.
