Homemade Caramels

Creating this popular sweet treat is not too difficult. You just need to follow the instructions, have a thermometer on hand, and adhere to the specified temperatures during preparation.
Ingredients (what you need)
250 ml of whipping cream
5 tablespoons of melted butter
1 vanilla bean
1 teaspoon of ground cinnamon
1/2 teaspoon of salt
Additionally
1/2 cup of honey
1.25 cups of sugar
flaky salt (optional)
Recipe steps
Heat the cream, butter, vanilla seeds, cinnamon, and salt until it reaches a boil, and as soon as it starts boiling, remove it from the heat. Then let it sit at room temperature.
Put the sugar and honey in a pot, and cook over medium heat until the temperature reaches 138 °C, stirring occasionally. Once this temperature is reached, add the cream mixture and continue cooking over medium heat until the temperature reaches 126 °C.
Line a baking tray or mold with baking paper and pour the prepared mixture onto it. We can gently sprinkle flaked salt on the surface.
Let it sit at room temperature for about 30 minutes, then place it in the refrigerator for approximately 2 hours.
Once the mixture has set, cut it into cubes or rectangles using an oiled knife or pizza cutter. Each piece of caramel is then wrapped in baking paper or plastic wrap.
Store in a closed container at room temperature for a maximum of 3 weeks.
