Excellent creamy sauce

Recipe for Svíčková, which I received from my grandmother.
Ingredients (what you need)
450 g meat
0.5 pcs celery
1 pc parsley
1 pc carrot
1 pc onion
1 tablespoon sugar
3 balls whole allspice
5 leaves bay leaf
1 handful thyme
1 pc lemon
1 cup sweet cream
to taste salt
as needed water
light roux
butter
Recipe steps
We clean and finely chop the vegetables. In a pot, we sauté the finely chopped onion, carrot, celery, and parsley in butter. We add a spoonful of sugar to the vegetables, salt them, sprinkle with thyme, add 2 - 3 bay leaves, and 4 - 5 allspice berries. We mix everything well, place slices of meat on top of the mixture, add some broth, and simmer until tender. We add water, depending on how much sauce we want, and let it boil. We remove the meat, bay leaves, and allspice, and blend the sauce. Then we bring it to a boil again, add cream, lemon, the finished roux, and season to taste. Finally, we add the meat back in.
We traditionally serve the excellent creamy sauce with dumplings.
