Curry pie with leeks

Classic French delicacy.
Ingredients (what you need)
dough 75 ml water
100 g butter
Provencal herbs
200 g all-purpose flour
1 teaspoon salt
filling 200 ml milk
250 ml whipping cream 40%
3 pcs eggs
4 pcs medium leek
1 tablespoon curry
30 g butter
150 g grated Emmental cheese
salt and pepper
Recipe steps
In a bowl, we prepare the dough from butter, flour, and salt. We add Provencal herbs, water, and knead the dough until smooth. We place it in the fridge to rest for an hour.
In a pan with melted butter, we sauté the chopped leek. After 15 minutes, we add curry and, after mixing, remove from heat.
We roll out the rested dough into a circle about 30 cm in diameter and place it in a greased and floured pie dish. We then evenly distribute the leek with curry on the dough and pour over the cream mixture. Finally, we sprinkle everything with grated cheese.
We place it in the oven at 180°C and bake for about 40 minutes until golden brown.
The finished pie (Quiche) can be served immediately. It can also be served cold.
